Snack Time!

Good Morning!  This week seems to be one of those that just drag on, but we are finally to Thursday, YAY!  Also its Memorial Day weekend which means a 3-day weekend for a lot of you.  I have 12 miles scheduled for Saturday morning and then a really fun 5K in Tualatin on Sunday.  The month of races has been a lot of fun, but I am really looking forward to my first Half Marathon coming up!  Only a couple more weeks!  Since it is coming up I am focusing on keeping the "bad" foods at bay till at least after the half, things like ice cream and to much beer, eye on the prize people!  Not that one beer is going to affect me winning or not (hahahaha) but it does affect my eating pattern.  Drink a beer, want chips, its a downward spiral.

One of my favorite foods since I started transitioning from carnivore to vegetarian is hummus, yumm!  My favorites are the flavored hummus and my current pick is the Tomato and Basil Hummus from Trader Joe's.

As you can tell by my photographs, I am a photographer, would you like me to do your upcoming wedding?

I found this one the last trip to Trader Joe's and I was so excited!  My two favorites squashed together!  I am actually not as in love with it as I thought I would be, but its pretty good.

So before becoming a vegetarian my claim to health fame was that I ate whole wheat bread...actually I thought I was eating whole wheat bread.  I was actually just eating brown bead with HFCS and lots of sugar.  Since I've started to become more aware to what I am eating and giving the girls one thing I have changed is our type of bread.  If possible I try to only buy this Ezekiel 4:9 bread, they sell it for $2.99 at Trader Joe's (I know what a deal...not) but compared to what they sell it for at a regular store, $4.99-$6.00 its a better option.  I like this particular sprouted bread mainly because its made here in the NW and I love supporting local NW companies especially since so many have amazing products.  I eat it before my long training runs with either hummus or an avocado spread on top and if I have a lot of time I'll top it with some veggies too.

I get a lot of grief from certain people since transitioning to a vegetarian lifestyle, but for me I've seen a lot of benefits and feel good about my decision.  I said that I would do it for a year and then re-evaluate but honestly I do not see myself going back to eating meat.  I was raised on meat and while it never affected me negatively and I was a lover of all things cheeseburger I've really had to branch out and get creative with food since cutting out such a large food group.  I love trying new things now and coming up with fun and interesting ways to make dinner delish.  It was a personal decision and I still buy meat for Jess and the girls will eat something with meat from time to time if given to them (they don't really love it) and some people think I would judge them for being meat eaters.  I can tell you now that unless your putting your child in harm's way or just being a bad person in general I try not to judge you, my friend Christie always says "Not your dog, not your front porch" LOL and that is a saying I try to remind myself when I get that little "Judgey Judy" on my shoulder.  So for everyone out there, eat meat if you want to!  By all means, enjoy every bite, but let me be and I won't make you feel bad for eating some poor animal's mother :) Kidding!

Any other vegetarians out there?  Anyone?  Anyone at all?!

  1. Welcome to the world of vegetarianism! I'm also a vegetarian and have been for the past six years. I took the plunge and have never looked back. :) Don't worry about people giving you grief; most of the time it's out of sheer ignorance. I think a lot of people actually want to know more about it, but are too scared to ask, so they tease instead, in hopes that we will provide them with truth. Anyway, best wishes - the vegetarian lifestyle is a great one!

By the way, I just hopped over to your blog from Monica's at Run Eat Repeat, so I hope you don't find this comment creepy or anything. :P
